In case you’ve been living under a rock, it’s Superbowl Sunday in two weeks. That’s right, on February 2nd, over 70 million pounds of avocado will be used to make guacamole for game day eats. 70 million?! Well, after all, it is the second largest food consumption day in America (behind Thanksgiving!)

I love Superbowl Sunday not for the actual game itself, but for the commercials and the food. Okay, that’s such a girly thing to say, but I said it.

The downside? Unhealthy foods. Heavy dips, fried everything, sugary chicken wings, pizzas and most likely, football shaped sweets. I read somewhere recently that the average American watching the Superbowl consumes 1,200 calories. Yeesh!

Well, I’m here to help. I have 5 easy party-friendly recipes that can be made (using your spiralizer, of course) to provide your friends and family with healthy options for the big game.

My favorite? My stuffed peppers that I posted up yesterday – and if you’d like to go the extra mile, omit the cheese – they’re still incredibly yummy (and festive!)

1. Chorizo, Avocado & Butternut Squash Rice Stuffed Peppers – serve these as halves – they’re filling, so people won’t pick on the bad stuff as much.

2. Jicama Fries – serve these in cute mini bowls with plastic forks.

3. Mini Pizza on the Inspiralized Bun – customize these to your liking, perhaps with a slice of pepperoni or two or top with a roasted veggie!

4. Tuna, Celery & Egg Zucchini Pasta Salad – omit the cucumbers to avoid excess moisture as it sits on your serving table.

5. Baked Onion Salted Potato Chips (or these, made of Rutabaga) – it’s healthier to make your own chips – serve them with a fresh salsa!

Ingredients

  • 1 large Yukon Gold potato peeled, Blade A
  • olive oil cooking spray
  • olive oil to drizzle
  • garlic salt to dust
  • pepper to taste

Instructions

  • Preheat the oven to 375 degrees.
  • On a baking tray coated in cooking spray, place in your potato slices. Drizzle with olive oil and season generously with the Garlic Salt and lightly with pepper.
  • Bake in the oven for 10 minutes, flip over and cook for another 15-20 minutes or until they have reached your preferred crunchy level. Enjoy!

  • It really is crazy the things that people eat during the Superbowl! I almost consider myself lucky that I can't eat most of it since so much of it has meat. :P These are great healthy veggie-full options!
  • I love these healthful veggie-full superbowl food ideas! And that I can eat the majority of them...unlike most superbowl food which is super meat heavy.
