What did I miss the most when I went vegan for those 2 years? My grandfather’s spicy sausage and peppers. The smell of the sizzling sausage, peppers, onions and the sight of the Parmigiano-Reggiano cheese being grated on that giant wooden cutting board, about to melt into the piping hot penne. Every time I reached for that tofu block, I smelt those smells. After wiping up my drool one last time this spring, I put down that tofu and looked forward to this day when I could present you with the perfect Inspiralized version.
I debated turning this into a spaghetti with sausage and peppers, but the cheese melts better onto the ribbons. Plus, it’s easier to make a big serving bowl of this and present to guests at your next fall soiree. Pretty sure that’s the first time I’ve used the word soiree. I’ve been reading way too many girly magazines lately. Tehe.
Why is this the perfect dish for your next par-tay? It’s bright, colorful, light, jam-packed with delicious Italian flavor and most importantly, so easy and quick to whip up, yet looks like something you’d see on the cover of La Cucina Italiana. Okay, maybe not that impressive, but certainly better than serving a boring bowl of pasta with marinara sauce, right?
I apologize (or you’re welcome) for the 9,328 pictures in this post… I decided to put down my 50mm lens and start using wider camera angles to create more of a scene and experiment with food styling. Next on my list is investing in a new lens and distressing some wood. Wow, never thought I’d put “distressing some wood” on my weekend to-do lists… I’ll have to drag Lu on that excursion (he has a very strict “no hand holding” policy at Home Depot, by the way – very adorable…. or annoying).
